Roasted Beets

Beets are so good for you and roasting them brings out their delicious sugars making them irresistible. You can use any type of beet, but I feature golden beets here (my favorite).


Serves 2




Ingredients

  • 1 bunch of beets (3-4 beets)

  • 2 Tbsp olive oil

  • 2 tsp salt

Instructions

  1. Preheat oven to 425 degrees. Line a baking sheet with aluminum foil or parchment paper.

  2. Remove the beet greens and save them for another time. They are a hardy green so you can saute them for a great side dish.

  3. Remove tops, root, and peel the skin.

  4. Cut the beets into bite-size pieces around 1 inch.

  5. Place the beets on your prepared baking sheet. Top with oil and salt and mix to coat.

  6. Roast for 20 minutes. (I don't even turn them)
