This salad is super fast, easy and perfect for a quick delicious dinner.
2 tablespoons extra virgin olive oil
1/2 pound shrimp, peeled and deveined
2 cloves garlic, minced
1/2 teaspoon sea salt
1 small lemon, juiced
1/4 cup fresh oregano, chopped
2 tablespoon fresh parsley, chopped
2 heads romaine lettuce
1 green onion, chopped
Combine oil, shrimp, garlic, seasonings, lemon juice, and herbs in a bowl and mix.
Add mixture to a frying pan and cook until shrimp is cooked.
Cut lettuce into bite size pieces, add to a large bowl and toss with green onion and your desired amount of Caesar dressing. I use about 3 tablespoons.
Divide tossed salad into 2 bowls and top with cooked shrimp mixture.
I will typically include a slice of sourdough bread from MAK Bread. I've also used this same shrimp mixture over pasta or zucchini noodles that are coated with a bit of butter and parmesan. Enjoy!
