Shrimp Caesar Salad

This salad is super fast, easy and perfect for a quick delicious dinner.


Serves 2



Ingredients

  • 2 tablespoons extra virgin olive oil

  • 1/2 pound shrimp, peeled and deveined

  • 2 cloves garlic, minced

  • 1/2 teaspoon sea salt

  • 1 small lemon, juiced

  • 1/4 cup fresh oregano, chopped

  • 2 tablespoon fresh parsley, chopped

  • 2 heads romaine lettuce

  • 1 green onion, chopped

  • Caesar dressing

Directions

  1. Combine oil, shrimp, garlic, seasonings, lemon juice, and herbs in a bowl and mix.

  2. Add mixture to a frying pan and cook until shrimp is cooked.

  3. Cut lettuce into bite size pieces, add to a large bowl and toss with green onion and your desired amount of Caesar dressing. I use about 3 tablespoons.

  4. Divide tossed salad into 2 bowls and top with cooked shrimp mixture.



I will typically include a slice of sourdough bread from MAK Bread. I've also used this same shrimp mixture over pasta or zucchini noodles that are coated with a bit of butter and parmesan. Enjoy!
