Tacos are a staple in our house, so I'm always trying new toppings. I love slaws because I can add pretty much anything and it makes an easy topping. I slipped in some kale one night and I fell in love. (yes, I'm a kale lover) Try this out and see if you can sneak in more veggies into taco night.
Serves 4
Ingredients
4 kale leaves, chopped
1/4 head purple cabbage, chopped
2 carrots, sliced
1/2 cup sour cream
1 Tbsp chili powder
3 Tbsp apple cider vinegar
1-2 Tbsp hot sauce
Instructions
Remove the stem from the kale and chop the kale leaves into bite-size pieces. Add to a large bowl.
Quarter the cabbage and remove the core. Chop a quarter and add to the large bowl.
Peel and slice the carrots thinly. OR use the peeler to create carrot shavings.
Add the sour cream, chili powder, vinegar, and hot sauce.
Mix well and chill until you're ready to use. I keep my slaw for up to a week if there are leftovers.
Feel free to sneak in more veggies like tomatoes, jalapenos, onions, etc and make it your own.
